SHRIMP FRIED RICE HACK











Easy Grilled Shrimp Fried Rice Hack
(with Help from Trader Joe's)

Ingredients:

1 bag Trader Joe's frozen Vegetable Fried Rice

1 pound frozen shrimp (16-21 size)

2 large eggs

4 rashers of bacon, crispy and crumbled.

1 cup bean sprouts, rinsed in cold water

1 cup snow peas, chopped

2 Tablespoons toasted sesame oil

1 clove garlic, crushed

1 teaspoon ginger, finely grated

1 Tablespoon Sriracha

2 scallions, thinly sliced

4 Tablespoons butter

1/2 teaspoon chinese five spice powder

1/4 teaspoon smoked paprika

Salt and freshly ground black pepper


Directions:

Prepare the shrimp for grilling. Thaw frozen shrimp quickly in clean running water, or slowly by placing in the fridge all day. Remove the tails and de-vein the shrimp. Add the garlic, ginger, paprika, five spice, and salt & pepper to the butter in a microwavable dish, or a small saucepan. Melt in the microwave or on the cooktop until the spices are absorbed.

Pre-heat your grill.

Pierce 5 or six shrimp on each skewer, making sure to put the skewer through the thickest part of the shrimp and the tail, making crescent shapes of each. Brush the melted spiced butter over each skewer, then turn them and butter the other side. Season both sides with salt and pepper.

Grill for 2 minutes on each side or until shrimp is just barely done, and opaque throughout. Set aside.

Heat 1 Tablespoon toasted sesame oil in a wok or large sautèe pan.

Lightly beat two eggs and scramble them in the sesame oil. Push the eggs aside and add the remaining Tablespoon of sesame oil, snow peas, shrimp, bacon, and the whole bag of frozen vegetable fried rice to the pan. Mix it all together.

Once the fried rice starts to get thoroughly heated, add the bean sprouts and scallions. When the scallions start to wilt, you're done. Serve immediately with chinese hot mustard or sriracha.


Notes:

This has become our go-to weeknight easy dinner. Oh sure, you could make vegetable fried rice from scratch, if you have leftover rice, lots of time and a whole produce section in your kitchen, but not as easily (or as cheaply!) as dumping a bag of fried rice into a pan. Even without all the extra ingredients, this stuff rocks!

The whole recipe makes three very generous servings as a main dish, or six smaller sides. A full serving lists out at 379 calories. a half-size serving requires some math, and I can't think that hard today...so...like 12 calories? Is that right? No? Well, let's say more than 12 then. Leave me alone.

Steamed shrimp works too, but you can't beat the flavor of spiced, grilled shrimp.

Toasted sesame oil is delicious, but toasted sesame chili oil makes your tastebuds pay attention.

Chicken breast is also a good protein for this quick dinner. Just cook the chicken accordingly. Shrimp is so delicate that it almost cooks when you just SHOW it to the grill. Chicken takes more direct convincing. Once grilled, cut the chicken into bite-sized pieces before adding to the pan.

Every ingredient in this recipe is available at Trader Joe's. I have said this before, and it always bears repeating: if you don't have a TJ's near you, you need to move.

It's so pretty seeing photos of grilled shrimp with the tails still on them. But who wants to dig shrimp tails out of your dinner...or your teeth?
