Coffee Creamer

Ingredients:

32 oz. Half-and-Half

16 oz. heavy cream

1 can (14 oz.) sweetened condensed milk

2 teaspoons unsweetened cocoa powder

1/2 teaspoon espresso powder

1 teaspoon vanilla extract

1/4 teaspoon almond extract


Directions:

Place cocoa powder and espresso powder in a large saucepan.

Add cream and half-and-half. Heat to steaming.

Add condensed milk to cream mixture. Stir to combine.

Heat mixture to steaming, but NOT boiling.

Add vanilla extract and almond extract and stir to combine.

Remove from heat.

Transfer to a (glass) container with lid. Store in the refrigerator, and shake before using.


Notes:

I like a little creamer in my coffee. A little honey, too. You are not a better person than me because you drink your coffee black.

It seems like every other creamer in the stores is made of palm oil and corn syrup. That disgusts me. I have tried to eliminate corn syrup completely from my diet. That stuff is poison.

If you're worried about the fat content, learn how to feel better about yourself. You're perfect already. You could sub out fat-free condensed milk though. That will help. There is no fat-free half and half.

The only cocoa powder in the world is Guittard Red Dutch-Process Cocoa Powder.
