CAROL'S OATMEAL COOKIES

Carol's Oatmeal Fruit Cookies

Ingredients:

1 cup salted butter

1/2 cup unsalted butter

1 cup sugar

1 cup packed brown sugar

2 eggs

1 Tablespoon vanilla

2 cups flour

1 1/2 cups oatmeal

1 teaspoon baking soda

8 oz. package pecan pieces

8 oz. package dried wild blueberries

8 oz. package dries tart Monterey cherries

Directions:

Preheat oven to 350° F.

Using a hand mixer, cream together butters and sugars until fully combined and fluffy.

Add eggs and vanilla and beat until smooth.

Mix in flour, oatmeal and baking soda.

Stir in by hand the fruit and nuts.

Bake for 15-20 minutes until slightly brown on the edges.

Notes:

Sure, you could use raisins instead (boring), but you could also use dried mango, apricots, and/or cranberries (exciting).

Trader Joe's carries all the dried fruit and nuts you could ever need.
