LEMON BARS









Lemon Bars

Ingredients:

Crust:

3/4 cup butter

1/2 cup powdered sugar

1 1/2 cups flour

Filling:

3 eggs

3 Tablespoons flour

1 1/2 cup granulated sugar

Juice and zest of 2 lemons


Directions:

Preheat oven to 350° F.

Mix butter, powdered sugar, and flour for crust.

Press into the bottom of a 9x13 baking pan.

Bake 15-20 minutes until very lightly browned.

Beat eggs until fluffy. Mix in granulated sugar, 3 Tablespoons flour, lemon juice, and zest. Pour on hot crust.

Bake for another 20 minutes.

Sprinkle with powdered sugar while slightly cool.


Notes:

It's almost surprising how refreshing and light these are considering all the sugar and butter!

If you have the opportunity to use Meyer lemons, don't hesitate.
