HONEY LIME CHICKEN KEBABS











Honey Lime Chicken Kebabs

Ingredients:

Glaze:

1/4 cup honey

2 Tablespoons Sriracha

1 Tablespoon lime juice

Kebabs:

8 large metal skewers

1 pound skinless, boneless chicken thighs, cut into 1 1/2-inch pieces

1 red bell pepper, cut into 1 1/2-inch pieces

1 medium zucchini, cut into 1 1/2-inch pieces

1/2 small fresh pineapple, cored and cut into 1 1/2-inch pieces

1 medium red onion, cut into 1 1/2-inch chunks

2 Tablespoons olive oil

Salt and freshly ground black pepper to taste

1 pinch (1 pinch -- HAH! more like 3) garlic powder, or more(!) to taste

1 teaspoon lime zest


Directions:

Preheat an outdoor grill for medium-high heat and lightly oil the grate.

Whisk honey, Sriracha sauce, and lime juice together in a small bowl. Set aside.

Thread the chicken, red pepper, zucchini, pineapple, and red onion alternately onto skewers and place on a platter.

Brush with olive oil and season with salt, pepper, and garlic powder.

Arrange the skewers on the hot grate. Close lid and reduce heat to medium. Grill until chicken is cooked through, turning skewers every few minutes, 15 to 20 minutes.

Brush the glaze on all sides of skewers during the last 2 to 3 minutes, turning to lightly caramelize glaze.

Transfer to a serving platter and grate lime zest on top. Serve warm.


Notes:

A side of Arroz Verde and a big margarita will stun your guests into speechlessness. This summer combination is just that good.

If you wrap the chicken pieces in bacon before grilling, everyone will know you are not on a diet. No apologies.

You can use wooden skewers if you don't have metal ones. Just be sure to soak them in water for half an hour first, so they don't immediately burst into flames when you put them on the grill.

You don't have to use zucchini, but what else are you going to do with all that zucchini you grew in your garden? Your friends and neighbors are getting tired of having to pretend they're grateful every time you dump another bushel on them.

If you think a single pinch of garlic powder is all you need, you have no taste and you should stick to eating boiled oatmeal. Plain. Boiled. Oatmeal.
