CILANTRO SLAW





Cilantro Slaw

Ingredients:

1/2 cup tightly packed fresh cilantro

1 cup plain greek yogurt

1/4 cup lime juice

1/2 teaspoon ground cumin

Zest of 1 lime

2 garlic cloves

3 green onions, roughly chopped

1 jalepeno pepper, cored and seeded

1/2 teaspoon kosher salt

1/4 teaspoon fresh ground black pepper

1 14 ounce bag of coleslaw mix or shredded cabbage


Directions:

Combine the yogurt, cilantro, lime juice and zest, cumin, salt, pepper, green onions, garlic, and jalepeno in the bowl of your food processor or blender. Pulse until mixture is creamy and smooth.

Drizzle over the slaw mix in a large mixing bowl and toss until evenly combined.


Notes:

Serve immediately, or cover and refrigerate for up to 24 hours.

This makes the perfect crunchy topping for tacos, grilled chicken or fish, or just as a light summer side dish.
